Nose: The Allégory cuvée comes from plots of Chenin Blanc located on a place called "Les Gorys". The grapes are harvested by hand and then pressed before being placed in Burgundy pieces for fermentation and then maturing for around 10 months, where 3 types of wood are used in order to have the finest and most complex aromatic expression possible, all in tension and balance.
